Hot and sour fish
Overview
Guizhou people like to eat hot and sour food, and the most famous one is Kaili fish in sour soup! Appetizing and refreshing! But Kaili sour soup is not available in some places. Today I used tomatoes and pepper to make a fish sour soup. Both ingredients are easy to buy!

Steps
-
A silver carp, (because my family likes to eat silver carp) kill it!
-
Cut into chunks with a razor blade
-
Break the fish head into two pieces, put the cut fish in a basin, and marinate it with three or four spoons of salt. Don’t worry if you put more in it. Marinate it for more than ten or twenty minutes and then wash it with water. You need to wash it several times. At this time, the fish is salted and there is no fishy smell!
-
While the fish is marinating, prepare the ingredients!
-
Chop the tomatoes, cut the green onions into small sections, and prepare the peppers!
-
Fry the bad chili peppers in oil until the water dries up, the chili peppers change color a little, and the skin of the chili peppers is a little curled up!
-
Fry the tomato sauce separately until the water in the tomato sauce dries up and you can see all the oil on it
-
Then put the fried tomatoes and peppers together and add water to boil! Put a piece of ginger, and after the soup boils, simmer over low heat for about half an hour!
-
When it's almost cooked, add pepper, MSG, salt (use less salt) and white vinegar (according to personal taste, taste it first if you think it's sour enough, you can leave it out), and then cook the soybean sprouts!
-
After the soybean sprouts are cooked, pick them up and put them in a container!
-
Then put the fish head and boil it first
-
Finally, add the fish pieces and green onions and boil for two to three minutes. If you cook it for too long, the fish will become stale and unpalatable!
-
The fish in sour soup is out of the pot!
