Shredded Pork and Tomatoes Braised with Taro

Wash the taro and steam it in a pressure cooker for about 10 minutes until cooked through.

Peel the steamed taro and cut into pieces.

Cut the tomatoes into small pieces, cut the ginger and garlic into shreds, and cut the green onion into small pieces and set aside.

Keep some mustard for later use. I used Wujiang Fuling mustard. When making soup, add some pickled mustard to enhance the freshness!

Pour a little oil into the wok, heat the oil over high heat and sauté the ginger and garlic until fragrant.

Shredded pork that was fried before.

Saute ginger and garlic until fragrant and add appropriate amount of shredded pork. If it is fresh meat, you can cut it into thin slices, mix it well with pepper noodles, five-spice powder, and cornstarch powder and put it into step 10.

Add tomatoes

After the tomatoes are cooked, add a large bowl of water.

After the soup boils, add mustard, fresh meat slices, and taro. Add salt and pepper and simmer over low heat until the soup thickens!

When it’s out of the pan, sprinkle with scallions and it’s ready to eat!
