Clean the river shrimp and cut off 1/3 of the head.

Wash the red peppers, leeks and green onions and set aside.

Slice garlic and shred red pepper.

Cut leeks into sections.

Heat oil in a pan, stir-fry river prawns and add a little salt.

Stir-fry until it changes color, then take it out of the pan and set aside.

In the remaining oil in the pot, add garlic slices and red rice shreds and stir-fry until fragrant.
