Wash the crayfish tails and set aside.

Prepare the ingredients: onions, ginger, garlic, dried chili peppers, Sichuan peppercorns, hot pot base, and a can of beer.

Place the shrimp tails in a pot under cold water, add ginger, garlic, and cooking wine and blanch them to remove the fishy smell. Rinse and set aside after boiling.
