Overview
Saltwater gizzards belong to Sichuan cuisine. They are named because the chicken gizzards are cut into flowers and the finished product is shaped like a flower. This dish is cooked hot and eaten cold. The gizzards taste crisp, tender and refreshing. It is a delicious little cold dish and a good side dish to accompany wine.
