Everyone in my family likes to eat steamed buns. I used to buy them from outside, but now I just make them myself. I can put whatever fillings I want. They are delicious and healthy. The following quantities can make fourteen buns, which is exactly two buns.

  1. Mix 4 grams of yeast with 15 grams of white sugar, add 280 grams of cold water (you can reserve about 10 grams of water for later use, each type of flour has different water absorption), stir and let it sit for three minutes, pour it into 500 grams of flour, mix it into a flocculent form, there is no dry powder, and knead into a ball

  2. Put it in the oven, add a bowl of boiling water, and ferment at 35 degrees. You can cover the basin with a piece of wet dough or plastic wrap to prevent the dough from drying out

  3. It's almost done after an hour of fermentation. Dip your fingers in flour and poke holes in the dough. If it doesn't shrink or collapse, it's considered fermented. You can ferment in a warm place without using an oven, and the time can be extended appropriately (except in summer)

  4. Take out the dough and knead it for a while, about two minutes. During this period, sprinkle more dry powder on the silicone mat to prevent it from sticking. Knead it until it is smooth and roll it into a long strip

Add an appropriate amount of warm water to the steamer, place a steaming rack and a wet drawer cloth, put in the wrapped buns, cover the pot and let it rise for 8-10 minutes (please shorten the time if it is summer). Turn on high heat and steam for 15 minutes, then simmer for another 5 minutes and then open the lid
