Asparagus and bean curd
Overview
Asparagus is rich in protein, multiple vitamins, calcium, phosphorus and other minerals, and has high nutritional value. I have never seen this kind of vegetable on the market before. Only in the past two years have I seen asparagus for sale in supermarkets, and the price is much higher than other vegetables. Today, asparagus and bean curd are stir-fried with a dish. It tastes salty and spicy.

Prepare the ingredients: asparagus, tofu skin, red pepper, chives, and garlic cloves.
-
After the asparagus is cleaned, peel off the old skin at the roots and cut it into small pieces with a hob; cut the tofu skin into short strips; cut the red pepper into small sections. In order to make it less spicy, I removed all the seeds inside; separate the green onions from the leaves and chop them into small pieces; flatten and chop the garlic.
-
Turn on the heat, put an appropriate amount of oil in the pot, add minced garlic and green onions, and stir-fry until fragrant.
-
Add asparagus segments and stir-fry.
-
Add oyster sauce, sugar and stir-fry.
-
When the asparagus is medium cooked, add the tofu skin, stir-fry, add pepper powder and salt to taste, and stir-fry evenly.
-
Add red pepper segments.
-
Add the scallion leaves, stir-fry evenly and turn off the heat.
-
Serve on a platter.
