Marinate the fish head with salt, cooking wine and ginger slices.

Cut tofu into cubes.

Add a little oil and fry the fish head on both sides.

Pour in boiling water. The fish head is too big, only 2/3 of it is covered. Add green onions and ginger slices.

Simmer over high heat for about 15 minutes. Remember to turn over the fish head. When the soup turns milky white, add tofu.
