Prepare the ingredients first, slice the ginger and pat the garlic.

Cut the dried chilies into half sections and set aside.

First pull out the intestines at the tail of the crayfish and throw them away, then remove the head. Use a toothbrush to brush the belly clean. Finally, wash it repeatedly with water and soak it in salt water for more than half an hour.

Then boil the water in the pot and pour in the cleaned lobster. Cook for 5-10 minutes. When the lobster is basically red in color, you can pick it up and set aside.

Pour oil into the pot, add ginger, garlic, Sichuan peppercorns, and dried chili peppers, stir-fry until fragrant. Add spicy fish base, and stir-fry until fragrant.

Then add the cooked crayfish and stir-fry for 2 minutes.

Then pour in the broth or water, add green onions and five spices. Cover the pot and simmer over medium heat to drain out the water. This is mainly to make the crayfish more delicious.
