Braised salted fish
Overview
Salted fish is a specialty of our hometown in Anhui. This dish is usually only eaten during the Spring Festival. As the end of the year approaches, it happens to be the coldest day in Shanghai in 35 years, so I made this dish to add a New Year flavor to it.

The ingredients are ready and the salted fish is cut into pieces;

Preheat the pot to 90 degrees, put the salted fish into the pot, cover the pot and simmer for 5-7 minutes;

Turn the salted fish over and simmer for another 5-7 minutes;

Because the salted fish I bought is very salty, I need to use hot water for half an hour and change the water twice;

Add cooking oil and ginger slices and stir-fry at 120 degrees for two minutes, then add a little dark soy sauce and stir-fry for two minutes. Finally, add an appropriate amount of warm water, garlic cloves and millet pepper, cover the pot and simmer at 160 degrees for 5-7 minutes;

Open the pot, add green pepper, red pepper and green onion, stir-fry, cover the pot and simmer for two minutes;

Boil the pot and add a little MSG to reduce the juice.
