【Mini Madeleines】

I bought some lemons online a few days ago, and the price was very good. After receiving the goods, I immediately started thinking about how to use them. The lovely figure of Madeleine flashed through my mind. I didn’t have a mold suitable for making madeleines at home, so I quickly sent one from the store, washed and rinsed it, and started working on it. The lemon is very fresh, and the fresh aroma is also very strong. The aroma lingers throughout the entire operation. When it is finally baked, the sweet taste quickly fills your mouth, which feels good. . . Ingredients: 50g low-gluten flour, 50g caster sugar, 1 egg, 50g butter, 1/4 lemon peel, 1.5g baking powder (1/4 tsp + 1/8 tsp), a few drops of vanilla extract, a pinch of salt

Take a lemon, clean it, peel 1/4 of it, chop it into pieces and set aside

Crack the eggs into a bowl and add sugar

Melt butter into liquid state

Pour into the previously mixed batter

Mix well, cover, and refrigerate for one hour

Take out the batter, let it warm at room temperature until it becomes fluid, and put it into a piping bag

Apply a thin layer of butter to the shell surface of the silicone mold

Then pour in about 8% of the batter

Place in the middle rack of the preheated oven, 190 degrees, about 12 minutes
