Peel broad beans and set aside.

Beat the eggs in a bowl, add 2 tablespoons of starch and a little salt, mix well with water (about 10ml) and pour into the egg liquid.

After the pan is hot, apply a little oil, pour in the egg liquid, and bake the egg skin.

Leave 1 piece of egg skin aside and cut the rest into pieces.

When the oil is hot in the pot, add the broad beans and stir-fry for a while. Add water and simmer until cooked and then remove.

Leave oil in the pot and stir-fry chopped pepper until fragrant.

Add the broad beans and egg skin, and season with salt and oyster sauce.
