Vermicelli crystal dumplings

I believe many people have eaten vermicelli. The best vermicelli is made from mung beans. It can also be made from corn starch or sweet potato starch. However, the quality is not as good as mung bean vermicelli because mung beans contain the most amylose, which makes them less likely to rot when cooked and has the creamiest texture. The price is also relatively expensive, so when buying, you should read the ingredient list carefully to see if mung beans are marked. Soak the vermicelli in hot water for 20 minutes, then rinse in cold water.

Cut the vermicelli into small pieces, shred the carrots, dice the green onions, and boil the carrots in water.
