  1. Wash the hairtail fish and set aside.

  2. Prepare marinating seasoning, black pepper, cooking wine, oyster sauce, light soy sauce, ginger, and salt.

  3. Add the seasonings, mix well and marinate for 15 minutes.

  4. Shred the ginger, mince the garlic, cut the millet and pepper into small sections, and cut the green garlic and celery into sections.

  5. Prepare cornstarch.

  6. Heat oil in a pan, wrap the marinated hairtail in cornstarch and fry in the pan until golden brown on both sides.

  7. Then take it out and put it on a plate for later use, and wash the pot clean.

  8. Heat oil in a pan and add chopped ingredients.

  9. Pour in the marinade juice and add some dark soy sauce.

  10. Pour into a small bowl of water, add some salt and bring to a boil.
