Yesterday was my child's birthday. I went to the supermarket to buy flour after get off work last night (I have been making noodles for my child and did not buy finished noodles from outside). I passed by the seasoning section and bought a package of pickled mustard. I planned to make a bowl of pickled mustard pork noodles for her. During this time, her appetite was not very good.   1. How to make the noodles is not the key. I will explain it in one sentence here. Put two cups of flour into the machine, beat one egg, sprinkle with a little salt, stir evenly, add water to 140 ml, and there is a mark on the measuring cup. Start the machine and you can come forward. I'm used to hanging the noodles with chopsticks to dry. If you are afraid of sticking, you can sprinkle some flour on the noodles.

  3. Add the previously marinated shredded pork, oil into the pan and stir-fry for a while

  4. You can eat as much pickled mustard as you like. I made it for my children, so I made it in small quantities. Continue to stir-fry the pickled mustard and shredded pork together until the pickled mustard and shredded meat change color and you can smell the fragrance. If it is for adults, you can add a little light soy sauce and chicken essence for seasoning.

  5. Add oil again and fry the eggs. Children like to eat runny yolk eggs, so I always fry one side. When they are slightly formed, I add hot water and boil them. After they are completely set, scoop them out and put them in the noodles to keep them warm. When you eat them, the egg yolks are still sandwiched (the outer layer is fully cooked, the middle is a little runny, and the bottom is fully cooked)

  6. Add boiling water to the pot, add a few drops of oil, a small spoonful of salt, bring the pot to a boil over high heat, and add the noodles.

  7. After boiling the pot again, pour some cold water into the pot. After repeating it twice, take the noodles out of the cold boiling water and put them into the noodle bowl. I didn’t take any pictures of the later step.

  8. Top with shredded mustard mustard and fried eggs. If you like to eat it with soup, you can add any hot stock.
