Blueberry mirror mousse cake
Overview
I have wanted to make a mousse cake for a long time, not only because this cake has a delicate texture, but it is also suitable for hot summer. There was no fish gelatin powder before, but I found that it can be completely replaced by QQ sugar, which can be bought everywhere. It was super hot yesterday, and the sun was shining brightly. My mother walked with me to buy QQ candy and blueberries, so I must repay the favor O(∩_∩)O haha~

Separate the egg whites and egg yolks, add white vinegar and 30g white sugar into the egg whites in three batches, and beat until dry peaks form.

Add corn oil to the egg yolk, sift in low-gluten flour and 15ml of water, and mix evenly.

Take one-third of the egg whites and mix evenly.

Pour the egg yolk paste into the remaining egg whites and mix evenly.

Place into an 8-inch mold with a loose bottom and knock out any big air bubbles.

Preheat the oven to 160 degrees for 35 minutes.

Let the cake cool, unmold it and divide it into two pieces.

Cut it slightly smaller with scissors.

Put 80g QQ sugar into a bowl.

Add 30g of boiling water.

Bake on high heat for one minute.

Mix well and let cool.

Weigh out the whipped cream.

Add 10g of white sugar and whip the cream at high speed.

Beat until 6 to 7 pieces are distributed. There will be lines, but it can still flow.

Pour the cooled QQ sugar solution into the whipping cream in portions, stir well each time, and then pour in another portion.

Stir evenly.

Place one cake slice into the bottom of an 8-inch removable bottom mold.

Pour in half of the whipped cream.

Arrange blueberries in circles.

Add another cake slice.

Pour the remaining whipping cream and smooth the surface.

Place in the refrigerator to chill for about 4 hours.

Take another 70g QQ sugar, add 30g boiling water, put it in the microwave on high heat for one minute, stir well after melting and let cool.

Pour the melted QQ sugar liquid onto the surface of the cake.

Place it in the refrigerator for about 2 hours until the mirror surface solidifies. Apply a hot towel around it and you can easily remove it from the mold.

Place a few small blueberries and small sugar beads.
