Sautéed Cowpeas
Overview
This is my first time making this dish. Usually the two are like neighbors who live in the same building and often bump into each other. A little seafood sauce combines the two perfectly. It is fresh, soft and glutinous, and goes very well with rice! !

Prepare the ingredients.

Cut the cowpeas into small pieces and blanch them.

When it changes color, remove and drain. Set aside.

Peel potatoes and cut into strips.

Heat the pan with cold oil (enough oil should be enough to cover the cowpeas), and add the blanched cowpeas.

Fry slowly over low heat until the skin becomes wrinkled and fished out.

Add potato strips and fry until a hard crust forms on the surface.

Pour everything out of the pot, just use the oil stuck to the pot, add the seafood sauce and stir-fry over low heat until fragrant.

Add fried cowpeas and potatoes.

Stir fry evenly.

Add a little less water and a little sugar.

The fire comes to a boil.

Just reduce the soup a little and thicken it.
