Dice the meat and mushrooms.

Mix the sweet noodle sauce, dark soy sauce, light soy sauce, cooking oil and cooking wine into the diced meat and mix well, then add the mushrooms and mix well, marinate for about ten minutes, pour oil into the pot and stir-fry until cooked.

Cut cucumbers and carrots into shreds. I put a little salt in the cucumber and marinate it.

Put a little oil in the pot and stir-fry the carrots (it will take a while to better absorb the carotene).

Put Qianzhang into boiling water and scald it, then run it through cold water.

Put cucumbers, carrots, and diced meat on top, roll them up, and cut them diagonally.
