A delicious winter health soup---Winter Melon, Corn and Pork Ribs Soup

Cut corn, carrots and winter melon into cubes, slice lotus root and set aside.

Blanch the bones with water first, then add water, ginger slices, wolfberries, and red dates into the pressure cooker, and simmer for about 20-25 minutes after boiling. Then add winter melon, lotus root, carrots, and corn, open the lid and continue simmering on low heat for 20 minutes. When serving, add salt and pepper.

It’s out of the pot. Because I added wolfberry and red dates, the color is a bit heavy. Without the red dates, the soup would be white.
