Another way to eat pork belly. If you can’t tolerate spicy food, please reduce the amount of chili pepper and Sichuan peppercorns. The perfect food and drink during the hot summer.

Add appropriate amount of baking soda to the pork belly and mix well. Set aside.

Heat the pot and add appropriate amount of rapeseed oil and lard.

When the oil temperature is 90% hot, lower the belly shreds into a spiral for 5 seconds and quickly pick them up.

Leave an appropriate amount of oil in the pot and sauté the green and red peppercorns until fragrant.

Add minced garlic, shredded ginger and scallions and sauté until fragrant.

Add green pepper and stir-fry until fragrant.

Add an appropriate amount of pork belly, chicken essence, pepper, oil, light soy sauce, sugar and pepper and stir-fry quickly, no more than 10 seconds, remove from the pot and serve on a plate.
