  2. Break open the dried red pepper and pour out the seeds (I think it’s because the seeds are fried and black, which hinders the appearance. So it’s OK not to pour them out); chop the onions and garlic.

  3. Put two tablespoons of oil, add red pepper and Sichuan peppercorns in the cold oil, and fry on the lowest heat. Fried Sichuan peppercorns should be fried over low heat. Novices, please do not stir-fry them over high heat, as they will turn black and bitter. Fry the red pepper for about 2 minutes and when it starts to change color, turn off the heat and take out the red pepper and Sichuan peppercorns and set aside. Pour half of the oil into the bowl and leave half in the pot.

  4. Use the remaining oil to stir-fry the bean paste until the red oil comes out (I also stir-fried Laoganma when I didn't have it, and the taste was OK. You can also add spicy ingredients such as chili powder and chili oil here). Add half a pot of water, stir in the stock essence (skip if you don’t have any), and bring to a boil. Add cabbage, cook for two minutes and remove.

When the meat slices completely change color and are cooked, take them out and place them on the cabbage. Sprinkle the onions and garlic from step 2 and the chili from step 3 over the meat slices.
