Wash the ginger, garlic, slices, garlic sprouts, dried chilies, star anise, bay leaves and other ingredients and set aside

Boil the mutton first (70% done) and blanch

Rinse the blanched mutton, then stir-fry: add a little oil to stir-fry the rock sugar, add ginger slices, garlic, dried chili peppers, bay leaves and other ingredients and stir-fry for a while, then add a little dark soy sauce, light soy sauce, and oyster sauce. After the mutton is colored, add an appropriate amount of water (to cover the mutton) and simmer over low heat until softened, then reduce the juice (simmer until there is only a small amount of soup)
