Remove the hair from the pig's trotters, blanch them in water, wash them and set aside.

Wash the strawberries, cinnamon, nutmeg, Sichuan peppercorns, and aniseed. Cut the green onions into sections, flatten the ginger with a knife, and set aside.

Put the pork trotters into a pressure cooker, add cooking wine (to remove odor) and rice vinegar (to remove greasiness) and cook for 15 minutes, remove and set aside.

Then put the pork trotters into the pressure cooker for the second time, add strawberry, cinnamon, nutmeg, pepper, aniseed, onion, ginger, cooking wine, sugar, and salt. Press for 20 minutes.

The cooked pork knuckle is ready to eat. (If you are not in a hurry to eat it, it is best to soak it in the soup overnight, so that the pork knuckle will be more delicious.)
