Suddenly I really miss the sweet water noodles in Chengdu. It’s too late to say it, but it’s time to start DIY. This is my first time to make sweet water noodles, and I can only find my way through Baidu.

Mix the flour with warm water, which should be slightly dry, and knead it into a smooth dough. Let it rest for half an hour.

Cut a small piece of dough, roll it into thin slices about 3mm, and then use a knife to cut into strips about 3mm wide.

Stretch each noodle with your hands and sprinkle some dry flour to prevent sticking.

Boil water. When the water boils, add the noodles. After they float, cook for a while. Turn off the heat immediately after the noodles are cooked through.

Pour out the noodles and drain them, then rinse them with cold boiling water to quickly cool them down, then mix in some cooking oil to prevent them from sticking.

Combine all seasonings in a bowl.
