Eggplant with meatloaf sauce
Overview
A few years ago, my mother's specialty dishes were fragrant meatloaf, eggplant with paste, rice mixed with eggplant sauce, and eating the meatloaf was delicious. Now that my mother is old, she has taken over the rice spoon and the symphony of pots and pans. It’s wonderful to share delicious food with everyone on the last day of March! Wonderful!

Wash the eggplant and cut it with a flower knife on both sides, set aside.

Add salt, pepper powder, thirteen spices, egg white, and starch to the meat filling.

Pour an appropriate amount of cooking oil into the wok, divide the fed meat filling into several pieces and put them into the pan, fry them and take them out, set aside.

Put the eggplant into the pan and fry until medium rare. Set aside.

Leave the oil in the pot, add eggplant and meatloaf, stir-fry quickly, and add the prepared large sauce.

Simmer over low heat for ten minutes. When it is almost out of the pan, add the chopped garlic cloves.
