Mushroom braised pork rice
Overview
Quick and delicious braised pork rice. You can prepare the meat sauce in advance, cook the rice when eating, and serve it with vegetables, and you can eat it quickly.

Cut the skin-on pork belly into thick strips.

Chop the soaked mushrooms into small pieces and shred the onions.

Put a little oil in the wok, add pork belly and fry until oily.

Add ginger slices and onion shreds and stir-fry. Pour cooking wine and soy sauce along the edge of the pot and stir-fry until fragrant.

Add enough boiling water, a few pieces of rock sugar, add boiled eggs and shiitake mushrooms, cover and cook over low heat for about 1 hour.

Boil a pot of water, blanch the broccoli and lotus root slices, drain them into cold water and set aside.

When the soup is almost done, add salt and pepper to taste. Reserve some of the soup to mix with rice.
