Prepare the ingredients for the filling

Start kneading the dough, put a little salt and an egg in the dough (so that the dough is not easy to break)

Let the dough rest for a while while preparing the filling

Mash the eggs in a pot and let them cool. Chop the leeks. Add the dried shrimps, eggs, oil, five-spice powder, chicken essence, and sesame oil to the leeks and stir. (Note that I did not add salt.) Stir evenly and then add salt. This will prevent the leeks from releasing too much water.

You can start wrapping. Divide the noodles into small pieces

Roll out into round dumpling skin

Place the filling in the middle of the dumpling skin and pinch it up and down

Pinch up and down from the far right, pinch to the middle, and do the same with the left.

Make the dumplings and they are ready to be cooked

Don't cook it for too long, just let the dumplings float to the top!
