Beef Hotpot
Overview
When I was in college, there was a Guokui shop in front of the school, selling salt and pepper, pork, and beef. Many people lined up there every day to buy. Guokui costs five yuan each, which is quite expensive for me as a student, but I still can't help but eat it every once in a while. I haven't eaten it for a long time now and I really miss it, so I wanted to try it myself.

Take appropriate amount of flour and add dry yeast

Add appropriate amount of water and stir into snow flakes

Knead the flour into a smooth dough

Cover with plastic wrap and place in a warm place to ferment for half an hour

The dough is ready! (Note: Guokui uses semi-risen dough, that is, the dough expands slightly, but there are no obvious bubbles. Be sure to pay attention. My dough is a bit over-risen.)

Cut the beef into small cubes, the smaller the better

Add Sichuan peppercorns, pepper noodles, salt, light soy sauce, a small amount of vegetable oil and a small amount of water to the diced beef, stir evenly

Put oil on the chopping board, place the dough on the chopping board, knead it several times, and divide it into several portions

Take a dough and use a rolling pin to roll it into a thin slice. The thinner the better

Spread a layer of beef filling on the dough sheet (leave the end of one side of the dough sheet unsmeared)

Roll up the dough sheet from one side

Roll it into a small pillar as shown in the picture, pinch both ends tightly

Press from both sides to the middle with your hands to form a cake shape as shown in the picture

Use a rolling pin to gently roll the dough into a 1cm thick dough

Add an appropriate amount of oil to the pan. When the oil is hot, add the flour cake and fry slowly over low heat (this cake requires more oil, half the thickness of the cake)

After one side is browned, turn it over and fry the other side for another 1 to 2 minutes

After this pancake is fried, the inside of the pancake is a bit raw. It needs to be baked on the stove or oven to reheat it and remove the oil on the surface to make the pancake crispier.

Put the cake on the grill, turn the oven up and down, 180°, and heat for about 7 minutes
