Cut the pork belly into thin strips of about one centimeter and fry in oil until golden brown. Add onion, ginger and garlic and stir-fry, add oil and onion to crisp! (If you buy ready-made scallion cake, you can also make it yourself and fry it with shallots!)

Add soy sauce paste, rock sugar, marinade packet, and boiling water to cover the pork belly. Add the hard-boiled eggs and add dark soy sauce, light soy sauce and star anise! If the taste is strong, you can add a little salt. Because the fried onions you bought come with salt, I didn’t add it here.

Pour into the casserole, bring to a boil over high heat, then reduce to low heat and simmer for about 1:30 hours, stirring with a spoon in the middle to avoid sticking to the pan.
