Raisin cookies
Overview
I like all kinds of biscuits, but I am a bit conflicted about the amount of butter used in biscuits. Therefore, I am constantly trying to add less butter and use vegetable oil instead of butter. Although this raisin biscuit does not use butter and does not add much vegetable oil, the biscuit is very crispy. Not much sugar is added, but sweet raisins are added. But it's very sweet, probably because of the raisins.

Have raisins ready.

Put the sugar and eggs in a container and stir evenly.

Add low-gluten flour, baking powder, milk, and vegetable oil and mix well.

Add raisins.

Knead into dough and let rest for 10 minutes.

Shape the rested dough into small balls of medium size and place them on the baking sheet.

Flatten with a spoon to form a cookie dough.

Use a fork to make some holes in the biscuit dough, then put the baking sheet into the oven, heat it up and down at 170 degrees, and bake for 18 minutes.
