Overview
In addition to making fragrant fried rice, overnight rice can also be made into delicious cheese baked rice. The key point of this dish is to buy enough tomatoes and cheese to have a good taste.

Prepare the ingredients as shown in the picture, this time I made it for two people. (Italian sausage is very common in foreign supermarkets. If you are in China, you can buy foreign-style sausages or meatballs with similar flavors instead, or other meats you like instead.)

Bake the Italian sausage in the oven at 200 degrees for about 10 minutes

Take it out and turn it over and continue to bake at 200 degrees for about 10 minutes

Add oil to the pot, add chopped garlic and stir-fry for a few times

Then add onions and stir-fry

Stir-fry until fragrant, add diced tomatoes, stir-fry together, add one teaspoon of salt and two teaspoons of sugar, continue to stir-fry, add an appropriate amount of half a bowl of water, cover the pot and simmer, bring to a boil over high heat and then simmer over low heat.

After a few minutes, add an appropriate amount of tomato sauce and stir evenly. Continue to simmer.

Simmer until the tomatoes, onions, and garlic are basically crispy, then turn on high heat to reduce the juice, stirring constantly during the process. The method is similar to making jam, but you don't need to cook it until it is as dry and sticky as jam. When the sauce is almost thickened, it's ready to serve.

Pour an appropriate amount of oil back into the pot, add the chopped onions and carrots and stir-fry.

Then put the half-cooked sausages that have just been grilled into it, pour a spoonful of water, quickly cover the pot, and simmer for 1-2 minutes.

After opening the lid, take out the sausage and cut into thick slices. Then add rice to the pot and stir-fry together. Stir well and add black pepper, an appropriate amount of salt and sugar, a small bowl of milk and about 2 tablespoons of water, simmer together, and add the chopped sausages.

When the stew is halfway through, add the previously cooked tomato sauce (half), an appropriate amount of cheese powder and shrimp, stir-fry evenly and continue to stew.

Simmer until the juice is much reduced but the rice is still wet, then turn off the heat. The rice must not be too hard, otherwise it will be unpalatable after baking.

Prepare two containers that can be placed in the oven (preferably glass or ceramic. Since the ceramic texture in my home is too large, I prefer to use a cake mold like this. Since it is a cake/bread mold, it cools down faster, so the rice also cools quickly. So in order to enjoy the delicious food slowly, it is recommended that you choose ceramic or glass)

Divide the rice into portions and use the remaining tomato sauce before smearing the surface of the rice.

Then put mozzarella cheese on top and garnish with black olives.

Preheat the oven at 200 degrees for 5 minutes, then put the rice in and continue baking at 200 degrees for about 10 minutes. When the cheese melts and the edges are slightly browned, it is ready to be taken out of the oven.
