Jam-filled sponge cake
Overview
Sponge cake is a batter made by mixing whole eggs. The principle of fluffing is to use the bubble performance of egg whites to inject a large amount of air into the egg liquid. The structure of the cake created by adding flour is very porous, similar to a sponge, hence the name sea cake. Because it is beating whole eggs, it takes a long time and requires a little patience. The whole process takes about 15 minutes.

Weigh out the ingredients for making the cake.

Sift the flour and set aside.

Crack 4 eggs into a stainless steel basin.

Beat the eggs with a mixer on low speed until they form a rough foam.

Then pour in 100 grams of granulated sugar.

Beat on high speed for about 15 minutes.

Whip the whole egg liquid until you lift the head of the whisk and the egg liquid will not drip.

Pour the corn oil into the whole egg mixture and continue to stir evenly. (10 seconds)

Add the sifted flour in three batches and mix gently with a silicone spatula.

Place a piece of oil paper on a baking sheet, pour the mixed batter into the baking sheet, and shake to create large bubbles.

Preheat the oven to 180°, with upper and lower heat on the middle layer. Place on baking sheet and bake for 18 minutes.

After cooling, remove from the mold.

Cut into small pieces of your choice.
