After cleaning the scallop meat, add a little salt, a little steamed fish soy sauce and a little Huadiao wine and marinate for 30 minutes or more. Here only a little salt, steamed fish soy sauce and Huadiao wine are needed. Too much will overwhelm the umami flavor of the scallops.

Boil the vermicelli in boiling water for 2 minutes, take it out and put it in cold water for 5 minutes. The vermicelli treated in this way tastes better and is more resilient.

Remove the vermicelli and drain the water. Add a little minced ginger, a little salt, a little steamed fish soy sauce, a little vegetable oil and stir evenly.

Brush the scallop shells clean, place the vermicelli in the scallop shells, and put the scallop meat on top.

Steam in microwave for 10 minutes. If it is an ordinary pot, it only needs to steam for 8 minutes.
