Shredded tofu

Add salt to the water, add shredded tofu and bring to a boil over low heat.

Add chicken essence and pepper to taste and cook briefly.

Scatter the beaten egg whites (only use egg whites) into the pot, turn off the heat and add the chives.

The egg yolks were used to make golden rice, and the egg whites were used to make tofu and egg custard.
