Grilled Winter Melon with Mushroom Sauce
Overview
Almost everyone can cook the dish of braised winter melon with dried shrimps. Dried dried shrimps and winter melon go well together, and the taste is even more delicious with the addition of shiitake mushrooms. Today I added shiitake mushroom sauce to add some solidity to the delicious taste. Personally, I prefer this approach today.

Peel and cut the winter melon into cubes, remove the stems and tops of the mushrooms and cut them into cross-cut pieces. It should be cut deeper. I cut it shallowly and the finished opening is not obvious. Wash the dried shrimps and soak them in warm water, slice the ginger, chop the green onions, and add two tablespoons of mushroom sauce.

Add a little oil to the pot and sauté the ginger slices until fragrant.

Add the winter melon and stir-fry until slightly brown.

Add shiitake mushrooms, dried shrimps, shiitake mushroom paste, a little salt, a small spoonful of sugar and cook over medium heat until the winter melon is soft and waxy.

Reduce the juice over high heat, add appropriate amount of pepper and thicken the gravy.

Remove from the pan and sprinkle with chopped green onion.
