Overview

Fried yellow croaker is a traditional dish of the Han people in Wenzhou, Zhejiang. Generally, large yellow croaker is used. Today I use wild small yellow croaker to make it, and it tastes great. This dish has the therapeutic effects of clearing heat and removing internal heat, anti-aging, moisturizing the intestines, calming the nerves, replenishing calcium, preventing cancer, strengthening the body, and promoting growth.

  1. Prepare the prepared yellow croaker (just pull the gills and internal organs gently, there is no need to cut the belly, so that the fried small yellow croaker will be more complete)

  2. Score each yellow croaker diagonally three times, turn it over and score three more times

  3. Add salt and appropriate amount of cooking wine and marinate for 10 minutes. Spread an egg yolk evenly

  5. Heat oil in the pot and gently put in the small yellow croaker. I forgot to take a picture of the fish when it was put into the pot (I answered a phone call)

After frying the fish twice, take it out, leave the oil in the pot, sauté the onion, ginger and garlic, add an appropriate amount of boiling water, light soy sauce and sugar to boil, then pour in water starch to thicken the gravy, finally add balsamic vinegar and two spoons of cooking oil and mix well.

  7. Finally, pour the gravy on the fried small yellow croaker and eat it while hot. It is sweet and sour, fragrant but not greasy, and tastes great!
