Hot and sour oyster soup
Overview
Sea oysters are called oysters in Fujian, Taiwan, but they are called raw oysters in Guangdong. Because my husband is from Fujian and likes to drink hot and sour soup. In addition to Cantonese soup, I occasionally make some hot and sour soup to satisfy his homesickness.

Wash the oysters, cut the cucumber into shreds, cut the pepper into sections, and slice the ginger for later use.

Wash the oysters and mix well with cornstarch and set aside.

Put water in a pot, put the dried chili and ginger slices into the pot and bring to a boil, add white vinegar, sugar and salt to taste.

After adjusting the flavor, add the oysters and bring to a boil. Add cucumber shreds and some soy sauce to adjust the color, then turn off the heat.
