Wash the fish and remove the internal organs.

Cut into cubes.

Add cooking wine, Sichuan peppercorns, pepper, salt and ginger to the cut fish pieces.

Mix well and marinate for 1 hour.

Pick out the Sichuan peppercorns from the marinated fish pieces and coat them in a layer of dry flour.
