Vegetarian dumplings
Overview
A few days ago, I purchased Golden Arowana Hetao Plain Snow Powder online and made a yeast pie. It was soft, sweet and chewy, with a pure wheat aroma. It was so delicious that the whole family couldn't help it and was craving for dumplings again! I happened to have some autumn vegetables from my sister’s house, including zucchini (also called zucchini), peppers and green onions, so I paired these ingredients together and made dumplings with vegetarian fillings for lunch. The noodles were so good, the skin was thin and the fillings were big, and the dumplings were transparent, comparable to crystal dumplings. They were tender and juicy, and much more delicious than leek fillings. Children who never like eating dumplings enjoyed eating them one bite at a time.

Steps
-
Prepare the ingredients. I originally planned to use half a melon, but after removing the pulp, I found it was a little short. In the end, I used a whole melon, which was just right.
-
Add appropriate amount of water to the snowflake powder in advance to form a dough, knead evenly and cover with plastic wrap.
-
Take a larger container, break in the eggs, add a little cooking wine and mix evenly. Add an appropriate amount of oil to the wok. There is no need to add additional oil when mixing the stuffing. Pour the oil into the egg liquid, stir quickly with chopsticks, the more broken it is, the better, then take it out to cool and set aside.
-
Peel and peel the melon, wash it, grate it into shreds with a grater, sprinkle some salt and marinate for about 10 minutes, then squeeze off the water and set aside.
-
Wash and chop the peppers, peel and chop the green onions, take a large basin, add all the prepared ingredients, and add an appropriate amount of salt, pepper, mushroom powder, and oyster sauce to taste. Be careful not to add too much salt, because the pickled melon has a certain saltiness, and the oyster sauce is also salty, so just add an appropriate amount of salt.
-
Stir all the ingredients evenly, and the colorful fillings look particularly appetizing. Friends who love meat can add a piece of ham sausage, which tastes great.

Making dumplings is very simple. Knead the dough into long and thin strips, pull it into small uniform dough, roll it into a cake, fill it with fillings, and pinch it with both hands. Everyone can make dumplings in the simplest way.
-
Cook dumplings: Add an appropriate amount of water to the pot, put the dumplings in when the water boils, bring to a boil and pour some cold water, then boil again and pour some cold water, boil for the third time, turn off the heat, take out, the dumplings are cooked just right, and the skins of the dumplings will never break when cooked like this.

Remove from pan and plate. Make a dipping sauce, it’s so delicious! The taste of autumn.
