Cut the large intestine, blanch it, drain and set aside.

Cut the tofu into pieces and soak it in salt water to remove the smell and resist breaking.

Heat oil in a pot. When the oil is hot, stir-fry the large intestine until the oil turns golden brown. Add onions, ginger, garlic, and cooking wine and stir-fry

Add the spicy bean paste and stir-fry evenly, pour in the drained tofu, add water to level with the tofu, bring to a boil over high heat and simmer over low heat for ten minutes, add chicken essence and turn off the heat.
