Prepare the ingredients

Separate the whites and yolks of 4 eggs and place them in a water-free and oil-free container. 4 egg whites, egg paste: 4 egg yolks + 1 whole egg liquid

Add 50 grams of orange juice to the egg paste and stir evenly

Sift 50 grams of low-gluten flour and set aside

Pour 40 grams of oil into the pot and heat until almost smokey. When the oil starts to smoke, pour in 50 grams of sifted low-gluten flour. Stir it into a thick and fine batter while pouring. (Be careful that the oil temperature is not too high, otherwise it will burn the noodles.) Let cool and set aside

egg whites, add about 6 drops of lemon juice (white vinegar can also be used) and 1 gram of salt and beat at low speed until it forms a coarse foam

For the first time, add one-third of the sugar, about 15 grams, and beat at high speed until a slightly fine paste

Add about 15 grams of sugar for the second time and continue to beat at high speed. I feel some resistance from the egg beater and the egg whites are delicate and smooth

For the third time, add excess sugar and beat at high speed until stiff peaks form and small sharp corners appear on the whisk

Pour the cooled hot batter into the egg batter and mix thoroughly with a manual egg beater

Add one-third of the egg whites into the egg batter, use a cutting and mixing technique to mix evenly

Then pour the mixed egg batter into the remaining two-thirds of the egg whites, and mix thoroughly

Finally, pour the cake batter into the mold, shake it on the counter for a few times to remove bubbles, smooth the surface, and put it into the preheated oven. Heat it up to 150 degrees and lower it to 130 degrees (the heat in my oven is too high) for the middle and lower layers. Use the water bath method for about 1 hour (put a plate of water on the bottom layer of the oven, and add enough water at one time) until you see that the cake is evenly colored
