  1. Wash the oxtail and soak it in cold water for half an hour, mainly to soak out the blood

  2. Wash again, add cold water to the pot, and add the oxtails. The amount of water should cover the oxtails. Bring to a boil over low heat and skim off the blood. After 5 minutes, take out the oxtail
