I cleaned up the small crucian carp and removed the scales and belly. Because it was too small and it was troublesome to remove the gills, I removed the head.

Add cooking wine, light soy sauce, a little dark soy sauce pepper powder, ginger powder, pepper powder, salt, if you like spicy food, add some chili powder.

Mix the seasonings well, rub some seasonings into the belly of the fish and marinate for 1 hour.

Transfer the marinated fish to a plate.

Don't wash the basin where you just marinated the fish. Add the flour to the remaining seasonings.

Add an appropriate amount of water and mix into a batter, the consistency should be about the same as yogurt.

Coat the fish with batter and fry in the oil pan until the batter solidifies. Take it out, let it cool down slightly, then put it in the oil pan and fry again. There is no time to take pictures during this process.
