Wash the fish, debone it, slice it into pieces, and marinate it separately with pickled fish ingredients for later use.

Soak mushrooms, kelp, and vermicelli in warm water and set aside.

Wash and blanch green vegetables and set aside.

Heat oil in a pan, add fish bones, and fry until golden brown on both sides. Then add green onions, sauerkraut, thirteen spices, cooking wine, light soy sauce, and dark soy sauce in sequence. After frying until fragrant, add water and pass through the fish bones.

After the water boils, add shiitake mushrooms, kelp, green vegetables, and fish fillets in sequence, and gently stir to break up the raw meat.

After all the vegetables are cooked, add the vermicelli and cook for 1 minute.
