Wash the yellow croaker, cut it vertically and then change it to a horizontal blade. Do not cut the fish into pieces. Cut the whole body into three to four pieces.

First, spread the fish body evenly with dry starch, then take a bowl, pour the starch into a paste and smear it on the fish body. If the container is large, you can put the whole fish in to hang the batter (not too thin, otherwise it will not be able to hang the batter)

After the fish is battered, you can start frying it. During this period, turn on the medium-high heat and the oil temperature should be high. First, pour hot oil all over the fish body to preliminarily shape it (don't be afraid, it won't burn your hands...). After the initial shape, put it into the oil pan and fry

Fry the fish for more than 5 minutes, take it out and set aside. Then adjust the sweet and sour sauce. Take a bowl, pour light soy sauce, dark soy sauce, brown sugar, vinegar, water, minced green onion and minced garlic and mix well. Take another pot and heat it to thicken the sauce

Finally pour the sauce and serve on the plate
