Prepare all the ingredients, wash them and prepare them for cutting. Bracken is bought fresh and ready to eat at the cold vegetable stall; just half each of red and green peppers, peeled first, then shredded; cut lean meat into shreds and fat meat into small pieces; slice dried tofu diagonally.

First, turn down the heat and put the fat into the pot, and fry it until the oil is released. There is no need to add blended oil or peanut oil (first, frying the pork in its own oil will make it more fragrant; second, of course it saves fuel)

When the fat meat is fried, add the lean meat, turn up the heat and stir-fry, then add a little minced garlic to saute until fragrant, and use a little oil to adjust the color

Then add bracken and stir-fry twice

The fire is relatively high, so the speed should be fast, then add the red and green peppers to the pot

Put the dried tofu into the pot, and then add the seasonings: a little salt, soy sauce and dark soy sauce. Do not stir-fry with a shovel at this time, otherwise the dried tofu will be fragile, just stir it with the pot
