Self-rising flour: As the name suggests, it is a kind of flour that can be directly kneaded with warm water without adding dry yeast. Self-raising flour can be kneaded into a dough by adding warm water and allowed to rise until it is doubled in size. 2. Dumpling flour: This kind of flour is more suitable for making noodles, dumpling wrappers, chaos wrappers, cake wrappers, etc. This kind of flour has a strong taste, does not become rotten after being cooked, and has better ductility when stretched, so it will not break easily. Dumpling flour is not suitable for steaming steamed buns and steamed buns. 3. Fuqiang flour: Fuqiang flour is relatively fine, with high gluten content and few impurities. It may be considered high-gluten flour. Fuqiang powder and an appropriate amount of yeast can also be used to steam steamed buns. 4. Proofing time The proofing time of the dough should be determined according to the room temperature. If it is summer, the dough will proof in about 1 hour. If the room temperature is around 278 degrees, it will take about 2 hours. If the room temperature is 178 degrees, the dough will take about 3-4 hours to proof. The dough should be placed in the basin and covered with a lid, otherwise the dough skin will dry out and crack. If the room temperature is low and you have an oven at home, you can put it directly in the oven for fermentation. The dough is ready when it has risen to 2 times its size. If the dough rises too much, the dough will have a sour taste, but it does not affect eating. The steamed buns have no sour taste, but the texture is slightly worse. 5. Knead the dough. For the first time, knead the dough until it is smooth. It will take about 5 minutes. After the dough has risen, sprinkle an appropriate amount of flour on the surface and knead again for 3-5 minutes. Then shape it into small steamed bun embryos. After kneading the steamed bun embryos, do not steam them immediately. They need to rest for about 15 minutes. After 15 minutes, you will obviously see that the buns have grown up. 6. Time and techniques for steaming steamed buns: about 25-30 minutes. Put an appropriate amount of cold water in the pot, brush an appropriate amount of vegetable oil on the grate, and place the steamed bun base on the steamer, leaving a gap in the middle, because the steamed buns will expand a bit in the steamer. After the fire came to a boil, thick white mist appeared. Continue steaming for 78 minutes, then change to medium heat and steam for 167 minutes.
