Mapo Tofu
Overview
Mapo Tofu is one of the famous traditional dishes of the Han people in Sichuan Province and belongs to the Sichuan cuisine. The main ingredients include tofu, minced beef (pork can also be used), chili and Sichuan peppercorns, etc. The numbness comes from Sichuan peppercorns and the spiciness comes from chili peppers. This dish highlights the spicy characteristics of Sichuan cuisine.

Cut the tofu into pieces, boil water and blanch it in a pot for 2 minutes

Cut the meat into minced meat

Take out the blanched tofu and set aside

After the pot is hot, add a little oil

Add minced meat and stir-fry

After frying until fragrant, add two tablespoons of bean paste

Mix cornstarch with a little water to make a liquid. After the cooking water in the pot becomes less, add the cornstarch liquid and stir gently while pouring
