Fresh bamboo shoot dumplings
Overview
I have used special noodle flour to make noodles. They are springy and delicious. I wanted to try if I could use it to make dumplings. It really lived up to my expectations. The dumpling skins are tough and easy to handle. They won't stick to each other after cooking. Use spring bamboo shoots as stuffing to make dumplings, which are tender, crispy and have a particularly good taste.
