When watching Top Kitchen, I learned about the golden egg fried rice made by Liu Yifan. My family liked it very much. I thought about whether I could make something else with the golden egg fried rice and try it as a steamed bun.

Soak black fungus, shiitake mushrooms, and day lily in water first, then chop them into pieces and set aside.

Chop onions and set aside.

Let the steamed rice cool, or you can use leftover rice from the day before.

Pour the separated egg yolks into the rice and put the egg whites into another bowl and set aside.

Mix the rice and egg yolk evenly so that every piece of rice is coated with egg yolk.

Before frying the fillings, make the dough well. I used baking powder to make the dough. When the dough is light, the hands are light, and the pot is light, cover it with a damp cloth to let it rise.

Heat the pan and cool the oil.

First add onions and fry until fragrant.

When the onions turn transparent, take them out and set aside.

Then pour in the mixed egg yolk rice.

Fry until the rice jumps in the pot, take it out and set aside.

Add peanut oil to the pot, pour the beaten egg whites, and be careful to spread it as much as possible. The larger the area, the better, it is a thin layer.

Do not move during the solidification process.

After solidification, use a spatula to break it into egg white rice.
